To brew good tea, water temperature is key. It`s commonly said that tea should be brewed with boiling water, cooled down to specific temperatures. Cooling the water can achieve temperatures like 85°C or 65°C.
Green tea (60°C -80°C), Gyokuro (60°C), Matcha (80°C), tender leaf tea (65°C-85°C), and Oriental Beauty (85°C) are some common types of tea that need to be brewed with lower temperature water to bring out the delicious flavor of the tea.
A series of complex temperature controls may require the purchase of a “temperature-controlled water boiler” to achieve these water temperature conditions. But how can we know the water temperature in a simple way? Through long-term tea brewing experience and experiments, the following method is provided for everyone to use. It is recommended to use a glass or ceramic cup, approximately 500ml in size, which is a common container size in homes. Pour boiling water into the cup and wait for 4 minutes to achieve approximately 85°C. Waiting for 20 minutes will cool it down to approximately 65°C.

After calculation, here`s a formula provided for use: (87.3 – water temperature) / 0.98 = waiting time (R² = 0.9364)

Different types of tea have their suitable brewing temperatures, but it`s not a strict rule that they must be brewed this way.
